    White Choholate Vanilla Mousse with Dark Chocolate Leaves

    In a saucepan, mix egg yolk and cream. Add vanilla bean and heat until the mixture reaches 75 C. Remove from heat. Add gelatin and white chocolate mass and dissolve. Let the chocolate mixture cool down. Carefully fold in whipped cream and refridgerate. Preparation of the chocolate leaves: Warm chocolate mass and spread on the under side of a metal pan or tray covered with a silicone pan liner or parchment paper. Before the chocolate is cool, cut into the desired shape. Arrange a chocolate leaf on each plate and with the help of a pastry bag cover with vanilla mousse, add another chocolate leaf, cover with vanilla mousse and finish with the last chocolate layer. Garnish with powdered sugar, berries and fruit puree.
