Fried Seafood Excelsior
Clean the fish well with water and salt. Shell the large shrimp, leaving on the heads and slice along the tail to devein. In a bowl, blend the milk and flour into a smooth batter and season with salt and pepper. Heat the olive oil to 180 C. Dip the seafood into the batter and fry it in the oil just until it becomes golden. Drain the seafood on paper towels, place it on the plate, season with salt and serve.
