Marinated Strawberries with Green Peppercorns
Melt the chocolate and spread it over pastry paper or a silicone baking sheet, then cut it into triangles about 12 x 8 cm. Place the strawberries in a bowl with lime juice and orange zest, powdered sugar, mint and green peppercorns. Mix the cheese the Muscatel wine, add powdered sugar, 3/4 of the marinated strawberries and julienned mint leaves. Prepare the strawberry sauce by beating the rest of the marinated fruit with a hand blender until liquid and then passing it through a fine strainer. In the center of 4 individual plates pour the cheese mix into a 10 cm ring mold, remove the mold and arrange the chocolate triangles. Garnish with gold leaf, diced strawberries and sauce. Dust with powdered sugar.
