Gazpacho
Soak bread slices for 1 hour in a shallow bowl with enough water to barely cover. Squeeze bread firmly. Combine bread, tomatoes, onion, red bell pepper, garlic, olive oil, vinegar and salt in a food processor and blend for 5 minutes. Strain the mixture through a fine sieve into a bowl. Season and refrigerate until well chilled. Garnish with bread slices and chopped vegetables. Serve very cold.
