Foie Gras and Mango on Toast
Cut the foie gras in 1 cm slices. Season with salt and pepper. Put the foie gras in a frying pan and sear both sides for 1 minute. Toast the bread. Cut the bread in circles, pour the mango puree on top and finish with foie gras. Bake in a 160 C oven for 4 minutes. Transfer to individual plates. Meanwhile, in a separate pan, heat the brown stock with the grapes to make the sauce. Adjust seasoning. Drizzle the sauce around the foie gras toast and serve.
