Tandoori Batair (Chef’s Special)
Clean the quails and rub them with salt, lemon juice and ginger-garlic paste. Keep aside for 30 minutes. Whisk yogurt and add red chili powder, red chili paste, cumin powder, nutmeg powder, and turmeric powder and garam masala. Coat the quails evenly with this mixture and keep aside for 2 hours. Skewer the quails and roast in moderately hot tandoor for 6-7 minutes, remove, baste with butter and roast again for 3-5 minutes. Remove from the skewer and serve hot accompanied with chutney.
