Beijing Roast Duck
Sear the Duck in boiling stock and hang to drain off excess juice. Apply the honey and leave hanging for about 8 hours. Roast in an oven at 200 degrees for 1 1/2 hours until the Duck is cooked and the skin crisp golden brown. Pancakes are made by mixing flour and water to make a soft dough, rest for 30 mins and roll into even shaped thin pancakes and cook on non stick pan. To serve carve the Duck and roll in hte pancakes with strips of leeks and batons of Cucumber accompanied with Hoisin sauce
