Peel and slice the Eggplants to a thickness of 1cm. Add slat and pepper and fry in oil until golden brown. In a pan mix the tomatoe paste and half a cup of hot water, add the eggplant and cook for 5 minutes. Thinly slice the onions and fry until golden brown, add the dry mint and fry for a further minute, add the cooked eggplant with the tomatoe paste and puree all ingredients to make a course paste. Serve hot garnished with Kashk.
