Blanch the Spinach in boiling water for a couple of minutes and refresh in ice water, drain and squeeze out as much water as possible. Finely chop the Spinach and set aside. In a pan saute the onions and Garlic until golden brown, add the Spinach and cook a little more, add the seasoning and then set aside to cool. Whisk the yoghurt to achieve a creamy consistency and incorporate the fried Spinach. Serve chilled
