• Chef Khulood Atiq Presents Emirati Cuisine To Over 700 Culinary Professionals In America

    Chef Khulood Atiq an Arabic and Emirati Cuisine Specialist who is responsible for overseeing the implementation of Arabic and Emirati cuisine throughout Tourism Development & Investment Company’s (TDIC) food and beverage outlets, was recently invited to present at The Culinary Institute of America’s 15th International Conference and Festival. Chef Khulood was representing the UAE amongst 70 other presenters and guest chefs speaking at the conference, ARC OF FLAVOR. The conference was based on the culinary exchange, from Mediterranean and Middle East to Asia and was held over 3 days. This event was held at The Culinary Institute of America at Greystone in the picturesque Napa Valley, California, United States of America.

    Chef Khulood presented in the Flavor Matrix: Middle East & North Africa cuisine and in the Spice Palette: Flavors in Dialogue, East to West. During these sessions, Chef Khulood presented some of the exotic flavors and ingredients of the United Arab Emirates, and demonstrated her own Emirati spice mixture, which she then used to create a grilled shrimp dish accompanied with labneh sauce. These sessions where attended by over 700 culinary professionals that spilled into the overflow rooms where those without seats could watch the sessions on TV screens.

    In addition to the informative sessions, Chef Khulood also participated in the World Marketplace, a tasting event during the evening where she offered samples of the Emirati cuisine featuring chicken thareed and chbaab followed by chammi and dates all served to over 700 attendees who passed through the event.

    Finally, Chef Khulood hosted a kitchen workshop titled Spice Bazaar: Emerging Middle Eastern Flavors of American Palates. Chef Khulood presented the history and blends of Emirati spice to approximately 20 chefs. These chefs were able to taste the different spices and ask questions as Chef Khulood worked through the session, enabling them first hand insight into the spices used within Emirati Cuisine.

    This achievement is testament to Chef Khulood’s skill as a chef and also as a presenter at an international level. Chef Khulood also has a bestselling book titled Sarareed, (an Emirati cuisine from the sea to the desert cookbook) which was part of Tourism Development & Investment Company (TDIC) in continuing its mission of promoting and preserving local heritage with the publication of this Emirati cuisine cookbook which was launched in February 2012, The book features recipes that have been passed on from older generations and also Chef Khulood has also created her own authentic dishes using Emirati ingredients in a more modern style.
